I’ve always said: “Life is too short to spend it into the kitchen”, but if you do, then cook something quickly and light, and of course, healthy. As Spring is in the air, all we need is more vitamins and Sun to revive ourselves. I’ve never been a sensitive weather person, even more when I moved in to Germany where the Sun is very “expensive” to us. So, here I’ve learned to enjoy every ray of sunshine. Therefore, when the Sun is up, we leave everything behind (cleaning, cooking, laundry, etc.) and take Vitamin D “live” from the Sun.
One of my favourite recipe is this salad with chicken and tarragon, easy to cook and very tasty.
You need: 4 spoons olive oil, 400g chicken (breast), 1 broccoli (500g), 2 peppers (red and yellow), salt, pepper, tarragon.
Boil broccoli and in the meantime cut the peppers into strips and leave them into boiled water for fifteen minutes. Then, squeeze in a strainer.
Cut the chicken breast into small cubes and roll them in a hot pan with olive oil for about 15-20 minutes until they become a little bit brown. You can also, use a grill to cook the chicken breast. I, personally, prefer the grill.
After the chicken is done, add broccoli and mix for 5 minutes, and then add the peppers and mix for 10 minutes more. Add salt and pepper to taste and, in the end add tarragon. It can be served hot or cold, it doesn’t matter how you choose, it’s delicious and tasty, anyway.
